A Snyder Saturday


Today Stuart had to work so Clark and I spent the day together. It started out as a rainy one and our early morning yard saleing had to be postponed. So we just laid around in our jammies and watched a little Mickey Mouse Clubhouse, ate waffles and read our new library books. At about 10:30 it began to clear up so we got in the car and drove around town to see if there were any sales out there. We found a few and I spent a whole $2.50! I did get a new pair of grey New Balance tennis shoes for C- they are a size 9, but I'm sure it won't be too long until he needs them. My deal of the day however was a pair of plaid shorts from CrewCuts (which is one of my favs!) for only FIFTY CENTS! I kind of felt like I was robbing the poor old lady, and I was smiling all the way to the car!



After our yard sale adventure we came home and had lunch. Meal times are getting a little more challenging as Clark now tells me what he wants and does not want! The other night all he would eat was yogurt and cheese. Today he wanted nuggets and apples and I could manage that. We ate, read the library books AGAIN and then he went down for a nap. I am not sure what it is about these library books but he is loving them. We have a case of probably 100 board books for him that he does not get that excited over, but the library books- Whoa. We have read the book Yummy, Yucky I bet 20 times today. He reads them and then puts them all back in his little bag we take to the library. 20 minutes later he gets them out again. So funny! I do love it though, I just find it funny.

During nap, I finished up all of our laundry. There is now not a stitch of dirty clothing in this house except for what we are all wearing. I even washed all sheets and towels. I have folded piles of laundry everywhere that I WILL put away tonight while Stuart watches golf. In between loads of laundry, I looked through cookbooks to find a fun dessert to make for dinner tonight. I found one of my old favorites: Raspberry Delight and decided on it! It is a recipe from my mom and I use to love it. I have not made it in years and I am pretty sure Stuart has never had it. So, after nap Clark and I ventured to WalMart to pick up all the necessary ingredients.
(I might have bought a few dresses for $9.00 too- shh!)

Required ingredients we picked up!



Raspberry Delight:
2 1/4 C. Flour
3/4 C. Butter
2T. Sugar
In a bowl, combine flour, sugar, and blend in butter with a wooden spoon until smooth. Press into an ungreased 9x13 PAN. Bake at 300 for 20-25 minutes, or until set (Should not be brown). Cool.




Filling:
1(8oz) pkg. softened cream cheese
1C. Confectioners Sugar
1tsp. Vanilla
1/4 tsp. Salt
2C. Whipped Topping
In a mixing bowl; beat cream cheese, cof.sugar, vanilla, and salt until smooth. Fold in whipped topping and spread over cooled crust.




Be sure to give your toddler juice that goes with the theme of what you are making!



Topping:
1(6oz) pkg. Raspberry Jello
1 C. Boiling Water
2 (10oz) pkgs. of frozen raspberries
Dissolve Jello in bolling water; stir in raspberries. Chill for 20 minutes or until mixture thickens. Spoon over filling. Refrigerate until set. Cut into squares.
yields: 12-16 servings (less if Stuart Snyder is present!)

So, as I type this we have steaks and corn on the cob on the grill and raspberry delight in the fridge. Stuart is home from work and our evening will consist of dinner and bath night for C. After C goes to bed it will be putting away all of the laundry pictured above while Stuart watches the US Open and I will hopefully get to read some of my new book! It was a low key Saturday which is a rare event around here. Have I mentioned I LOVE SUMMER?!!
